During Summer days, Italy assumes a whole different aspect, a lighter one. The streets are filled with a special spirit that one could define as the most renowned “La dolce Vita”…The hot season brings on the table all the colours of the real Italian cuisine, which is made of spices, aromas and products that grant Mediterranean cuisine the title of excellence in the world.

The tuna tradition is very ancient in Sardinia and deserves a special mention: there are many Tonnare that have been in function for centuries and represent a must-see for food lovers who are also interested in how the fish is cured.

 

The natural vegetation on this island and the subsequent harvest of herbs and plants such as wild thistles contribute to make Sardinian cuisine one of the most peculiars in Italy. So unique that has received the title of nutritional model and humanity’s oral and intangible heritage from Unesco in 2010.

A quick list of the main meat-based dishes: Trattalia, Zurrette, Berbeche, Zimino, Mungetas and many other dishes that have bushmeat as main ingredient. A typical regional dish is Favata: made of broad beans and many vegetables, this dish requires a long preparation and many ingredients.

Speaking of products of the land, on cannot forget to mention durum wheat semolina, of which the most famous and high-quality pasta is made. Back in 1600 this type of pasta was called “Cagliari’s pasta”.
